What to cook for Apple Savior: a selection of lean apple recipes

Apple Savior, which is celebrated on 6 August in 2024, coincides with the period of the Assumption Lent. On this holiday in Ukraine, people traditionally prepare lean dishes with apples from the new harvest. This day marks the beginning of the harvest, and housewives actively use apples to prepare a variety of dishes.
Ukrainian housewives cook pancakes, various pies and rolls with apple, honey and poppy seed fillings on Apple Savior. Baked apples with honey and raisins
Ingredients:
- 4 teaspoons of honey
- 2 tablespoons of icing sugar
- 4 teaspoons of raisins
- 4 apples
Method of preparation:
- Wash the apples, cut off the tops and very carefully cut out the cores. If desired, you can use the cut tops as “lids”.
- Place the apples in an ovenproof dish and put 1 teaspoon of honey and raisins in the middle of each apple.
- Close the apples with the lids and put them in the oven for 15-20 minutes at a baking temperature of 180 degrees.
- Put the baked apples in a bowl and sprinkle with powdered sugar on top.
Lean apple charlotte
Ingredients:
- 1 cup of corn flour
- 1 cup of wheat flour
- 1 cup of sugar
- 1 cup of apple juice
- 1 teaspoon of baking soda
- 1/4 cup of vegetable oil
- 3 apples
- lemon zest, cinnamon
Method of preparation:
- Wash the apples, peel and core each one. Cut the prepared apples into slices, about six pieces.
- Next, make the dough by mixing all the dry ingredients in a deep bowl (cinnamon, baking soda, sugar, and both types of flour). Add the oil and apple juice to the mixture and mix thoroughly.
- The next step is to prepare the baking tin. To do this, grease the baking dish with oil, pour the batter into it and put the apple slices in.
- Sprinkle with sugar and place in the oven for 40 minutes (180 degrees).
- Before serving, the cake can be decorated with powdered sugar or almond petals.
Recipe for lean apple cookies from Liza Glinskaya
Ingredients:
- 2 pcs. grated apples
- 4 tbsp coconut oil
- 1.5 tsp of baking powder
- 200 g of flour
- 1.5 tbsp with a slide of sugar
- A pinch of cinnamon powder
Method of preparation:
1. Peel and grate the apples on a fine grater.
2. Combine the grated apples with the sugar and melted coconut oil.
3. Mix the flour with the baking powder and cinnamon powder.
4. Combine the dry mixture and the apple mixture and mix until smooth.
5. Put the dough between two sheets of parchment and smooth it out with a rolling pin into a layer a couple of millimetres thick.
6. Leave the layer in the parchment in the freezer for half an hour to an hour.
7. Remove the parchment from the frozen dough and cut it into squares, rectangles or any other shape.
8. Put them on the parchment and bake the cookies in a preheated 175 °C oven for 15-18 minutes.
Crumble with apples and plums
Ingredients:
- 2-3 pieces of apples
- 200 g of plums
- 1/2 tsp cinnamon
- 100 g of flour
- 70 g of sugar
- 100 g butter
- 2 tbsp. l oatmeal
- A pinch of salt
Caramel:
- 3 tbsp. l. sugar
- 2 tbsp of water
- Wash the plums, remove the pits and cut them into slices.
- Pour sugar into a frying pan, add water and stir to make caramel.
- Put the plums in it and fry for a minute. Dice the apples into large cubes, add to the plums, sprinkle with cinnamon, stir and fry for another minute.
- Put the fruit into a baking dish and smooth it out.
- Mix the flour and sugar and rub the butter into the mixture. Grind the mixture into sandy crumbs, add the oatmeal and salt. Spread the crumble over the fruit and smooth it out.
- Put in a preheated 180°C oven and bake until golden brown. Eat with spoons.
Lean apple pie
Ingredients:
- 3 apples
- 100 ml of warm water
- 100 ml of orange juice
- 100 g of sugar
- Zest of one lemon or orange
- 80 g of vegetable oil
- 220 g of flour
- 1 tsp of baking powder
- A pinch of salt
- Powdered sugar
Method of preparation:
- Rinse three medium apples in running water, peel, cut into arbitrary cubes.
- For the dough, mix warm water, orange juice, sugar, lemon or orange zest, vegetable oil, flour sifted through a sieve with baking powder, salt and icing sugar in a deep bowl. Beat thoroughly with a whisk until smooth.
- Pour the prepared apples into the batter and mix again.
- Grease a baking tin with butter and pour the batter and apples into it.
- Bake for about 40 minutes at 180°C.
