Buckwheat bread replaces wheat: what Ukrainians choose

Buckwheat bread is gradually replacing traditional wheat bread on the Ukrainian market. This is due not only to taste preferences but also to health concerns. This was stated by Leonid Kozachenko, the head of the Ukrainian Agrarian Confederation, in an interview with the YouTube channel "Komersant Ukrainian".

“Consumption of bread made from 100% wheat flour can cause problems even for young people. It affects not only overweight but also a number of other health indicators. Young people may not feel it, but at the age of 50, it has a more noticeable effect,” says Kozachenko.

Unlike wheat bread, buckwheat bread is low in calories and does not harm the body, which is why it is recommended as a healthier alternative, he notes.

“20 years ago, few people on the global market knew about buckwheat bread. Now the demand for it is growing, and in the future we will have to increase the crops of this crop,” the expert adds.

The choice of Ukrainians in favor of buckwheat bread is not accidental. Demand for alternative types of baked goods increased after wheat prices spiked in 2022-2023 due to the war and the blockade of seaports. It was then that producers began to offer more bread made from buckwheat, corn, rye, and grain mixtures.

According to the Ukrkhlibprom association, in 2024-2025, the market share of wheat-free bread increased by 15-20%. The trend toward healthy eating also plays a role: buckwheat bread is considered dietary, gluten-free, and more nutritious.

Similar “grain shifts” have already occurred in Ukraine before, for example, in the 1990s, when corn and rye breads became popular due to a shortage of wheat.
